Georgia Peach Pie
Ingredients:
2 pie crusts
2 cups fresh Georgia peaches
1 cup sugar
2 tablespoons water
1/4 cup all purpose flour
1/8 teaspoon ginger
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons butter, cut into 1/4 inch pieces
1/8 teaspoon allspice
Instructions:
Preheat oven to 425 degrees
Fit pie crust to an oiled pie plate
Bake crust for 5 minutes at 425
Remove from oven, allow to cool
In a saucepan, combine Georgia peaches, sugar, water, flour, cinnamon, nutmeg, allspice, and ginger
On a low heat, allow mixture to simmer for 10 minutes or until thickened
Pour mixture into prepared crust about 3/4 full
Put butter pieces over mixture
Seal with second pie crust and crimp edges
Bake at 350 degrees for 30-40 minutes
Remove from oven and allow to cool
Cooking Time:
1 - 1 1/2 hours
